This is a yummy, moist banana bread recipe. It is especially good with chocolate chips!

Wholesome Banana Bread
1 cup sugar
1 egg
3/4 cup of flour
1/2 cup whole wheat flour
1/4 cup of wheat germ
3 tbsp melted shortening
1 tsp baking soda
3 ripe bananas, mashed (I always use more for added moistness & flavour)
chocolate chips (optional, to taste)

Blend sugar and egg
Sift flours, wheat germ and baking soda
Add flour mixture to egg mixture, blend
Add melted shortening, blend
Add mashed bananas, blend
Turn into a greased loaf pan
Bake at 325 to 350 for about 1 hour.
* Note that toothpick will not come out clean unless you have over-baked the bread.

Yummy with tea, this light shortbread is always a party favourite!

Whipped Shortbread
1 lb butter, at room temperature
1 cup icing sugar
3 cups flour
1/2 cup cornstarch
1 tsp. vanilla

Beat all ingredients together with electric mixture until the mixture resembles whipped cream. Roll into balls or drop by the teaspoonful onto a lightly greased cookie sheet. May be topped with silver balls, sprinkles or glazed cherries or a chocolate chip.

Bake for about 15 minutes @ 350 ยบ F.

This recipe can be halved, but why? Make the whole batch and give some away. I guarantee it will make somebody smile!
